Halibut Fish Tacos

Google and Pinterest are two of my best friends when it comes to looking for new recipes to try. I had some halibut in the freezer that I wanted to cook up all fancy, and I came across this recipe! One thing that is important to know about me and my cooking is that I don’t always follow the recipes exactly. For example, most fish tacos recipes recommend that you grill the fish, but I decided to just bake mine in the oven. Sometimes I will also substitute some ingredients if I don’t have something, but I will try to make note of those changes! You can make this recipe as spicy as you want depending on how much spice you add to the marinade and fish sauce. What I love most about this recipe is how all of the different flavors come together.

Ingredients:


Fish

1 lb. lean white fish fillets

Salt and pepper

2 Tbsp. olive oil

1 small lime, juiced

1 clove garlic, minced

1 1/2 tsp. chili powder

1 tsp. ground cumin

1/2 tsp. ground paprika

1/8 tsp. cayenne pepper (optional)

8 tortillas (any kind you choose, but white corn would taste best)

Fish Taco Sauce

1/2 cup of plain, nonfat Greek yogurt

1/3 cup of mayo*

1 small lime, juiced

1/2 garlic tsp. powder

1/2 tsp. cumin

1/4 tsp. salt

1 tsp. Sriracha hot sauce (or to taste)*

*I just used sriracha mayo

Toppings

Pico de gallo

Cojita cheese

Shredded purple cabbage

Avocado

Optional

Cilantro

Hot sauce

 

Cooking Instructions:


1. Season the fish with a little salt and pepper on both sides.

2. In a mixing bowl, whisk together the oil, lime juice, garlic, chili powder, cumin, paprika, and cayenne.

3. Place the fish in a shallow pan, pat dry with a paper towel, then spread the marinade on top of each piece. Allow the fish to marinate for a few minutes. If you have the time and want more flavor, cover the pan and stick it back in the fridge for 20-30 minutes.

4. Preheat oven to 400 degrees F. Place the pan with the fish filets in the oven and bake for 12 to 15 minutes. Check to make sure that the fish flakes easily when tested with a fork to ensure that it’s fully cooked.

5. Allow the fish to cool for a minute or two before creating your fish taco masterpiece! You can layer the toppings in any order you wish.

6. Serve with Mexican rice, and enjoy!

If you want to grill the fish…

1. Preheat the grill to medium-high heat. Brush grill grates with oil and grill fish filets for about 3-4 minutes on each side, flipping only once.

2. Transfer the fish to a plate and allow it to rest for a few minutes before dishing up.
