Chicken Fajitas

I tried this recipe from 21 Day Fixate on BeachBody earlier this summer, and it was one of the most simple, healthy meals I have ever made. Bonus: it’s healthy for you! I highly recommend checking out more recipes from their website.

This recipe makes 4 servings, 2 fajitas each

Ingredients:


1 tsp. chili powder

1/2 tsp. sea salt or Himalayan salt

1/2 tsp. ground cumin

1/2 tsp. garlic powder

2 tsp. olive oil (divided use)

4 (5-6oz.) raw chicken breasts, boneless, skinless, cut into 1/2 inch strips

1 medium bell pepper (red or green), cut into thin strips

1 medium onion, thinly sliced

1 Tbsp. fresh lime juice

8 large romaine lettuce leaves (or tortillas)

1/2 medium avocado, thinly sliced

Salsa

 

Cooking Instructions:


1. Combine chili powder, salt, cumin, garlic powder, and 1 tsp. oil in large resealable plastic bag.

2. Add chicken, bell pepper, and onion. Mix gently to coat.

3. Heat remaining 1 tsp. oil in large nonstick skillet over medium-high heat.

4. Empty contents of bag into skillet and cook, stirring frequently for five to six minutes, or until chicken is cooked through.

5. Remove from heat. Add lime juice.

6. Evenly top lettuce leaves or tortillas with chicken mixture, avocado, and salsa.

7. Dish up!
