I made this light meal just a few days ago, and it was so light and refreshing. I love sweet fruity flavors, which is what makes this such a great summer recipe! I use only a few spices in most of my recipes, but please always feel free to switch it up and add more to your liking.

Makes 1 serving
Ingredients:
Fish
1 salmon fillet
Salt & pepper
1 Tbsp. olive oil
Lemon
Salad
1 cup spring mix
1/4 cup roasted walnuts
1 Tbsp. sunflower seeds
1/4 cup fresh blueberries
1 1/2 Tbsp. blueberry dressing (or whatever fruit dressing you have)
Cooking Instructions:

Preheat the oven to 400 degrees F.

Line a shallow pan with tinfoil and brush olive oil all over it. Transfer the fish to the pan and lightly brush with olive oil.

Sprinkle salt and pepper on top of the salmon, and bake it in the oven for about 20 minutes (cooking time depends on the amount and thickness of the fish). Check to make sure the fish is done by testing it with a fork to see if it flakes.

Place the walnuts on a baking sheet on a pan and roast them for about 6-8 minutes at the same time you bake the salmon. Be sure to take a peek at them every few minutes, so that they don’t burn. They should be a golden brown color when they’re done.

Mix all of the ingredients for the salad, dish up, and enjoy!
